Understanding the Grass Fed Fraud
Agri-business has found yet another way to taint real, true stewardship practices into what they can technically label the same product. Heh. We ask you to picture this: Mono-culture grass grown with heavy fertilizers, pesticides (and GMO in its future for sure!). This grass is devoid of the inherent nutrients real live soil and natural ecological systems provide. Fed to cattle, trapped in feedlots, likely standing in their own feces, heavily medicated, monitored and slaughtered at a rate of 400 an hour. This is the new Grass Fed Beef. Now available at all your local supermarkets, chain stores and buying clubs. Now you understand the reason “Grass Fed Beef” is so cheap at Costco.
First let us start by saying we hand select our farms, ranches and fisheries where ZMP beef (pork, chicken and fish too) come from. We’ve researched our sources, met our stewards, walked their land and talk with them regularly, asking all the right questions like….
ZMP: Is your beef actually grass fed, free roaming on pasture all year round?
HERONDALE: YES IT IS – OUR BEEF CATTLE GRAZE EXCLUSIVELY ON OUR CERTIFIED ORGANIC PASTURES, AND DURING WINTER WE FEED THEM HAY AND BALEAGE WHICH IS HARVESTED FROM OUR FIELDS.
ZMP: What makes your farm better than the rest in the Hudson Valley?
HERONDALE: WE FOCUS ON TWO MAIN THINGS – THE HEALTH OF THE ANIMALS AND THE HEALTH OF THE LAND – WE OPERATE WITH HOLISTIC MANAGEMENT PRINCIPLES – TO ENSURE THAT ALL OUR ANIMALS ARE IN GREAT HEALTH AND HAVE HIGH QUALITY FORAGE TO GRAZE ON AND EAT ALL YEAR ROUND.
ZMP: What is your background and experience as an expertise in grass fed beef?
HERONDALE: WE STARTED OUR HERD 15 YEARS AGO, WE STUDIED THE BREEDS OF BEEF CATTLE WHICH THRIVE ON GRASS FED DIETS AND WE STUDIED GRASS FARMING TO ENSURE HIGH QUALITY DIET FOR OUR ANIMALS
ZMP: How do you feel about the industry ruining the term “grass fed beef”?
HERONDALE: IT IS BECOMING A BIT LIKE INDUSTRIAL ORGANIC – THE TERM IS BEING ABUSED TO LOWER THE STANDARDS REQUIRED. WHAT DIFFERENTIATES US IS THAT WE ARE GRASS FED – GRASS FINISHED. REGULAR COSTCO TYPE GRASS FED JUST MEANS THAT THE ANIMAL HAS BEEN ON PASTURE AT SOME POINT OF ITS LIFE, BUT MOST LIKELY IS GRAIN FINISHED.
ZMP: Why are your practices better than feedlot beef (whether “grass fed” or grain fed)?
HERONDALE: THE ANIMALS ARE DOING WHAT THEY ARE DESIGNED TO DO – EAT GRASS AND LEGUMES OUT OF THE PASTURE, AND GET PLENTY OF EXERCISE – DURING THE GRAZING SEASON, WE MOVE OUR COWS EVERY DAY TO FRESH PASTURE. IN A FEEDLOT THE ANIMAL STANDS IN THE SAME PLACE – GENERALLY IN VERY UNHEALTHY ENVIRONMENT.
ZMP: What is your slaughter process?
HERONDALE: ANIMALS ARE TAKEN TO THE SLAUGHTER HOUSE 1 DAY BEFORE THEY ARE SLAUGHTERED TO ENSURE THAT THEY ARE NOT STRESSED FROM THE JOURNEY. THEY ARE KILLED AT A VERY HUMANE FACILITY.
ZMP: At what age do you slaughter and why?
HERONDALE: 24-30 MONTHS. THAT ALLOWS THE ANIMAL TO REACH MATURITY, AND BE WITHIN THE 30 MONTH USDA CUT OFF FOR USING CUTS WITH BONE FROM THE SPINE.
ZMP: What is your aging process? What do you do differently that makes your delicious meat tender versus other grass fed meat which can be off-tasting, dry and tough?
HERONDALE: WE HANG FOR 18-21 DAYS. THE IMPORTANT THING IS THE ANIMAL IS NOT STRESSED BEFORE OR DURING THE SLAUGHTER PHASE, AND IS ALLOWED TO GROW TO MATURITY – SOME ANIMALS ARE SLAUGHTERED TO YOUNG. MATURITY AND WELL FED = WELL MARBLED.
ZMP: How do you measure the health of your soil and grasslands?
HERONDALE: WE TAKE SOIL AND FORAGE SAMPLES EVERY YEAR AND ANALYZE THEM
ZMP: Is your packaging BPA free?
ZMP: What do you feed your cattle in the winter? Green grass hay? Silage?
HERONDALE: GRASS HAY AND GRASS SILAGE
ZMP: Lastly, at ZMP not only are we about finding the best tasting, best for our performance beef, but also how the bigger picture is affected by the farms we support. Please tell us how you manage your farm and grazing lands to be synergistic for the ecological environment, such as influencing community agricultural practices, benefiting the consumer (US!), improving rather than polluting the land and water, and improving our social community?
HERONDALE: WELL MANAGED ROTATIONAL GRAZING HAS VERY BENEFICIAL EFFECT ON THE SOILS AND THE FARM IN GENERAL – WE FARM ORGANICALLY – SO NO PESTICIDES OR HERBICIDES ARE EVER PUT ON OUR FIELDS. THIS ENCOURAGES ALL TYPES OF BIRDS, INSECTS AND MICRO-ORGANISMS TO THRIVE IN THE PASTURES AND IN THE SOIL – THIS ADD HEALTH BENEFITS FOR ALL. OUR CUSTOMERS KNOW THAT THEY CAN EAT ANY MEAT PRODUCTS WHICH ARE RAISED AT HERONDALE AND BENEFIT FROM THIS PARADIGM.
